The cuisine of Mumbai is a potpourri of all influences drawn to it from its hinterland & from all over India and overseas - the Maharashtrian, including the robust Kohlapuri cuisine, the delicate cuisine in Saraswati, the many varieties of Muslim communities such as Bohris, Khojas and Menons, the Christian East India, the local fisher folk cuisine, and Parsi.
The Bombay dishes comprise of:
- Bombay Vada Pao - Two veg patties gently spiced, in our home baked caramelised onion pao bread
- Maratha Bhajia Curry - Vegetable bhajias in a curry made with Maharashtrian Goda Masala including unusual spices like stone flower and sun dried coconut.
- Khoja Chicken Biryani - One of the tastiest biryanis of coastal India, with caramelised onion, almond, mace & essence of Himalayan screw pine flower. Layered chicken & rice slow-cooked together until the spices are absorbed & infused with the rice
